The producer
Who are they?
In Saint-Armand, Pigeon Hill's vines grow on southeast-facing hills in alluvial soils overlooking Mont Pinacle. The Shufelt family has farmed these lands since 1964, and the first vines were planted in 2008 with the idea of working with varieties truly suited to Quebec's climate.
The vineyard is conceived as part of a much larger ecosystem. Regenerative organic agriculture, biodiversity, animals in the vines, cover crops and minimal soil disturbance are part of this approach. In the cellar, fermentations happen naturally, with little intervention, without filtration or fining, with the goal of letting the wines tell the story of the place they come from.

The vineyard works to enrich its ecosystem: biodiversity, cover crops, compost and animals in the vines are integral to its approach.

Intervene as little as possible
Natural fermentations, small presses and the absence of filtration or fining accompany an artisanal winemaking that seeks above all precision and expression of terroir.
