With cheese, don’t automatically think red: fresh whites and sparkling wines are often the easiest pairings.

Why it
works.

Cheese brings fat, salt and sometimes a lot of intensity. The acidity of a white or the freshness of sparkling wines helps lighten each bite and works particularly well with creamy cheeses.

A lively white easily accompanies a brie, a camembert or goat cheese. A more textured white can follow more flavorful cheeses. If you insist on red, choose one that’s fresh, fruity and low in tannins, like a Pinot noir or a Gamay.

In practice

For a board with several cheeses, start with sparkling wines or a fresh white. It’s often much more versatile than a big red. If you absolutely want red, choose one that’s light and low in tannins.

What to avoid

Very tannic reds can become dry or bitter with certain cheeses, especially the creamiest or saltiest ones.

When serving

Take the cheeses out of the refrigerator a little before the meal. Serve sparkling wines around 8 à 10 °C, whites around 10 à 12 °C and light reds slightly chilled.
