With sushi, start with freshness and acidity. A dry, lively white is often the easiest choice.

The pairing

Why it
works.

Sushi brings together several elements: the delicacy of the fish, the vinegared rice, the salt of soy sauce and sometimes the kick of wasabi. A fresh, lively wine will support all of it without overpowering.

With delicate fish, think Albariño, dry Riesling, Grüner Veltliner or Chablis. If the bites become richer, spicier or topped with sauces, a slightly more aromatic wine can work very well. It’s not necessary to find a different pairing for every piece.

In practice

If you order a varied platter, don’t try to match every sushi. Choose a dry, fresh and lively white that will carry through the whole meal.

What to avoid

Powerful, tannic reds are rarely easy here. With raw fish and soy sauce they can quickly make the pairing feel harsh.

When serving

Serve the white chilled, around 8 à 10 °C, but not icy. It will open up in the glass as the meal goes on.
