Why it
works.

Tourtière brings together meat, rich pastry, spices and roasted notes. It therefore calls for a wine with enough presence to match the dish, but above all enough freshness to lighten each bite.

With a classic ground-meat tourtière, medium-bodied fruity reds work particularly well. A spicier version or one richer in meat can take a bit more intensity, while a delicate recipe benefits from keeping the tannins soft.

In practice

With tourtière, don't necessarily look for the most powerful red. The best balance often comes from a fruity, fresh wine, with enough character for the spices and roasted flavours, but tannins soft enough for the pastry.

What to avoid

Very tannic, very high-alcohol, or heavily oaked reds. With the pastry and spices, they can make the whole unnecessarily heavy.

When serving

Serve the red slightly cool, around 14–16 °C. This temperature preserves the fruit and freshness while allowing the wine's spicy notes to express themselves.
