The producer
Who are they?
Trabanco's story begins in 1925 with Emilio Trabanco, who at the time produced cider for his family and neighbours in Lavandera, in the Asturias. The family cidery developed around Asturian sidra natural and traditional methods passed down through generations. Today, Trabanco remains closely associated with this cider culture, where apple selection, natural fermentation and ageing in large traditional vessels play a central role.
Their approach
What sets them apart.
Asturian sidra natural
Trabanco works within the tradition of Asturian sidra natural, with a dry style and a direct expression of the apple.
Chestnut casks
The large traditional chestnut-wood vessels are part of the cidery's historic know-how and are notably used for the fermentation of its traditional sidra natural.
Apples for cider
The cidery works with different categories of cider apples to seek balance between acidity, bitterness, structure and aromatic expression.
Le Premier Verre
Why we follow them.
Because Trabanco helps us understand cider in a cultural context completely different from Quebec. Here, sidra isn’t an alternative to wine: it has long been part of the table, the cider houses and the rituals of the Asturias. It’s an essential reference for showing that the world of cider also has its traditions, its terroirs and its regional styles.
