Why we love it
Because it shows a completely different way of making bubbles compared with Cava. Instead of inducing a secondary fermentation by the traditional method, the wine is bottled before fermentation finishes and it continues naturally under a crown cap. The result is light, lively and a touch more spontaneous. It’s also a chance to discover Bianco d'Alessano, a grape from southern Italy that’s particularly well suited to Riverland’s hot, dry climate.
